Chowder
Serves 4 - once again I think this is more likely to fill two 'Hungry Horaces' than four people
2 tablespoons oil
250g unsmoked bacon chops - I used a gammon steak, no bacon chops to be found - trimmed of all fat and cut into small pieces
1 medium onion, chopped
375g potatoes, peeled and chopped into about half inch cubes
800ml hot chicken stock
325g (or thereabouts) can of sweetcorn, drained
Heat 1 tablespoon oil in a large saucepan and cook the bacon/gammon for 4 minutes, remove and set aside. Add another tablespoon of oil, add the onion and cook until soft. Add the potato and stock, cover and simmer for 15 minutes.
Remove half the mix and set aside with the bacon. Puree the rest of the potato and onion with the stock and half the sweetcorn in a processor.
Season with pepper and return to the pan (and if you used an electric blending stick thingy as I did, wipe away the splatters from the cooker hob, glass splashback, tiled wall, front of apron and even your specs - sigh).
Add the bacon mix and remainder of the sweetcorn, heat thoroughly and serve.
Things I do: served it with fresh crusty bread, ate it and then washed the kitchen floor. Mental note, in future I'll use the food processor rather than go for the so-called easy option.
By the way, it was delicious - the two-legged mouse voted it a hit - after he stopped laughing at the huffing and puffing as I cleaned up the mess!! Mind you, it looked much worse until I realised a lot had hit my specs :)

He is still using the Five Roses Flour cookbook we got as a wedding shower gift...It is a tried and true book but very basic!
I love a hot soup...especially a hot chowder on a cold, blustery day...all the better with crusty bread or rolls!
Off to tackle another challenge...what did I get myself into...the last ones were fun but i have some real doozers ahead of me! My plan is to tackle two more easy ones tomorrow am and then tackle the one I am dreading in the afternoon.
Yummy....I wish our weather would get cold enough for my honey to want soup. I know, be careful what you wish for. It's funny when you said servings were 4 but was enough for 2. You and I share the same appetite. All sounded very healthy and very "Bostonian" I'm with Scrappymo on the crusty bread. Can I have mine smothered in butter? There aren't any Weight Watchers reading this I hope....Shhh! Don't tell my group! Well, I guess it's better than chocolate cake and ice cream!

ReplyDeleteYummy, this looks so tasty, and I love reading thru your recipes. (Don't know what gammon is! but it sounded good). I think our USA corn chowder may be a bit more creamy than this looked to be, but I'd try this in a heartbeat. Glad the Resident Mouse liked it too. I also have a Big Mouse who lives at my house...But better one Big Sweet Mouse than some tiny little ones with scampery feet IMHO. TFS & Hugs

Mmmm, looks delicious, Di. Comforting and warming on cold days such as we are now enduring. Needless to say this reminds me of the many different chowders I enjoyed in Massachusetts ... clam chowder with hot chocolate. Sounds an odd combination but, when you have spent a freezing cold morning bird-watching on Plum Island, you can't beat it :)) Hugs, Elizabeth xx
